Straw yellow with citrus hues, featuring notes of grapefruit, some linden, and almost honey-like nuances. Aromas of the sea. The attack is tense and fresh with fine bubbles and a lot of salinity. Fresh, very mineral, and saline. The perfect pairing for oysters, barnacles, and shellfish.
Concept
Produced using the traditional method without any dosage, from a local grape variety planted in the crevices of rocks, in a unique terroir at the base of a volcanic mountain, in the middle of the ocean, and right next to the sea, where the "song of the crab" can be heard. This proximity, sometimes just a few meters, necessitates protecting the vineyard from the strong and salty Atlantic winds with stone walls built by hand.
Selective manual harvest in 20kg baskets, whole-bunch pressing, and transfer after 12 hours to horizontal fermentation tanks of 600-1000L. First fermentation is spontaneous.
