Demarie Barolo Riserva 2015 Magnum

This Barolo Riserva undergoes meticulous production, beginning with fermentation in stainless steel tanks at 24–25°C for 20 days. Regular cap management ensures optimal color and tannin extraction. Post-fermentation, the wine remains on the skins for an additional 30 days, enriching its tannin structure and complexity. It is then aged for five years in large, neutral Slavonian oak barrels (2,500 liters), significantly exceeding the legal minimum of 18 months. This extended oxidative aging softens tannins and imparts nuanced flavors of smoke, black pepper, and cinnamon. The use of recycled barrels preserves the wine’s fruit character while integrating subtle oak influence.

Tasting Notes
The wine exhibits a medium garnet hue, characteristic of aged Nebbiolo. Aromas are pronounced and complex, featuring blackberry, black cherry, plum, figs, tobacco, old leather, and black pepper. On the palate, it is dry with firm yet evolving tannins, medium acidity, and flavors of black cherry, blackberry jam, pipe tobacco, and leather. The finish is long and layered.
